Course overview
People with disability sometimes need support at mealtimes. Getting that support right keeps meals safe, nutritious, and enjoyable, and it protects a person's health and dignity.
This course covers the basics of supporting someone at mealtimes. Learners look at how to follow a person's mealtime management plan, prepare balanced and appealing meals, and respect each person's choices, including their right to take informed risks.
It also builds practical safety skills: telling the difference between choking and swallowing difficulties, using the right food and fluid textures, setting up safe seating and posture, and handling and storing food safely. Throughout, learners see why following the plan and knowing when to report a change keeps the people they support safe.

Course structure

Do support workers create the mealtime management plan? No. Plans are developed by qualified health professionals such as speech pathologists, dietitians, occupational therapists, and registered nurses. A worker's role is to read, follow, and use the current version at every meal, and to report any change so the plan can be reviewed.
What is IDDSI and do workers need to modify textures themselves? IDDSI is a framework that standardises food textures (levels 3 to 7) and drink thickness (levels 0 to 4) for people with swallowing difficulties. Workers only prepare modified food or thickened fluids when they are trained and the plan directs it.
